Choose a project like a hat or scarf, something small that you truly can finish quickly. Once you find a pattern that you really like, try to memorize it. If you don’t have to keep referring to the instructions, then you can finish that much faster.

All patterns have steps. Try to set up an assembly line method that will allow you to work on several pieces at once. Maybe you work all of one color and then stop. Wherever your stopping point is, try to work in sets of 5. This breaks up the project, and as an added bonus when you finish you finish several at once. - Get creative
Just because you are using the same pattern over and over again doesn’t mean that it has to be boring. Try different textures of yarn, different hook sizes, and different trims. You can change the look of your pattern drastically through your materials. No one has to know that the pattern is the same. Except you that is! - Work ahead
When you get good at the assembly line, then you can get ahead of the curve. Try to keep a few finished pieces on hand to use in emergencies. If you always have pieces then you can work when you have time rather than trying to force it out when you really don’t feel like it.
